that taste good. actually, they taste really good. not the dry whole-wheat pancakes you are used to. these are light and crunchy. making a healthy pancake does not mean they have to taste like cardboard and sit in your stomach like a brick. the secret here is soaking the oats for 10 minutes in buttermilk before adding them to the batter. makes a huge, moist difference.
adding ground flax seed is a brilliant idea. flax is high in fiber and omega-3 fatty acids. i throw it into almost everything. smoothies, pancakes, muffins, and pizza dough usually have trace amounts of flax seed. a tablespoon here a teaspoon there doesn’t change the batter, and adds a lot of nutrition.
and with all the butter and syrup i am gonna pile onto these once healthful pancakes, i welcome any excuse for seconds.

Yummy! Those look perfect for any meal of the day!
Sound divine! Are they better than those buckwheat ones you served me over New Years? pretty hard to beat them!
…I really mean the sourdough pancakes..uh er…all so good, I mix them up.
Wow, delicious and healthy!
These were freakin’ awsume!!! Highly recommened. I didn’t used the buttermilk but used soy and the were great!
Pancakes were great. My husband made them -improvised… we had no buttermilk, so used sour milk; had no flaxseed; he didn’t want to melt butter, so used olive oil; had no quick oats, so used not so quick ones; and read the recipe wrong, so put in a tablespoon of soda. I could taste the extra soda, BUT they tasted good besides. Next time, we will try to have buttermilk on hand, and will be more careful on the soda.
