not to mention mini chocolate chips, smooth and oh yes, creamy peanut butter… what else?… well, we don’t have to talk about the exorbitant amount of sugar (almost 2 cups) or the fact that these already unrestrained brownies are then topped off with a smooth layer of ganache. no, what we need to talk about is how i love them. i do, very much. so much so, i err, um… had one for breakfast. you will too. these guys are vicious, they show no mercy. they will have you saying, “your chocolate fell into my peanut butter”, or more likely, where are the keys, i need the to get to the gym…
don’t let the thick batter fool you, they will not be dry. these brownies, in fact, taste like cookie dough. be still my heart.
peanut butter brownies gourmet magazine- tweaked
for the brownies
- 2 sticks unsalted butter, softened
- 1 3/4 C of sugar
- 1 C peanut butter (creamy or chunky)
- 2 large eggs plus 1 large egg yolk
- 2 t vanilla extract
- 2 C all purpose flour
- 1 1/2 C (9 oz)semi sweet chocolate chips
for ganache
- 1 1/2 C semisweet chocolate, chopped
- 1/2 C heavy cream
- 1 T unsalted butter
make brownies
preheat oven to 350, rack in middle, butter a 13×9 inch baking pan, line bottom with parchment, and butter parchment.
beat together butter and sugar with an electric mixer until light and fluffy, beat in peanut butter, then beat in whole eggs, egg yolk, and vanilla. stir in flour and chocolate chips until just combined. spread batter into baking pan, smoothing the top.
bake until a toothpick inserted into center comes out with some crumbs still attached, about 40 minutes. cool completely in pan on rack, about 1 1/2 hour.
make ganache
bring cream to a boil, pour in chopped chocolate, let sit for a minute. gently whisk in butter until smooth. spread ganache on cooled brownies and let stand until set, about 20 minutes.
cut into little squares of bliss

This first photo is gorgeous! Beautiful light and beautiful brownies. I can understand having one for breakfast. Besides, doesn’t the peanut butter make it healthy and nutritious? (Don’t tell me otherwise; let me continue with that pleasant little fantasy.)

Oh my these look insane. I could never make these because I wouldn’t be able to stop until they were gone or I was sick. If there was any way to get rid of the butter they could almost be a healthy snack….. I’m just dreaming here I think. Whenever I need to get hungry for a big meal, I’ll come here and look at those pictures for a bit. Thanks!
